To qualify as Kobe Beef, the cattle must meet a strict set of standards established by the Kobe Beef Association, including verified Tajima lineage, a specific weight range at time of processing, and a minimum Beef Marbling Score (BMS) of 6. Each animal must be born, raised, and harvested within Hyogo Prefecture, and the beef must undergo inspection to confirm quality and authenticity before it receives the official Kobe Beef certification mark. This beef is known for its high levels of intramuscular fat, producing fine-grained marbling and a higher ratio of oleic acid, which contributes to its distinctive cooking properties and eating quality.
